Stay Sail is our 10-foot tall, kinetic sound sculpture created by world-renowned Canadian sculptor Don Dickson. Stay Sail sits on the bow of the winery deck overlooking the vineyard and Cayuga Lake. The sound is wind-driven.

WINEMAKER'S NOTES "What is your favorite wine?" is a question frequently asked in our hospitality room. So during the 2005 harvest, I addressed this by creating these completely unique wines without regard to cost, quantity, or commercial acceptance. They are available in very limited quantities only at the winery. Below are winemaker's notes for these wines.

Stay Sail Red
A blend of Maréchal Foch and Chambourcin grapes

A serendipitous winemaking event. Both wines underwent malolactic fermentation - that is the natural conversion of malic acid to lactic acid softening the wine. They were then aged in the barrels, in which they were originally fermented, until bottling in August 2006. Full bodied with bouquet of mint, chocolate cherries and with a finish of raspberries and gentle tannins. Will continue to develop for at least 10 years. Match this with fillet mignon smothered in brandy peppercorn sauce.
Barrel fermented in American oak used one year and then aged in barrel for 18 months. Crisp. Fruit flavors of cherry and raspberry balanced by subtle oak nuances. Will age for at least two more years. Perfect dry aperitif or drink with spicy hors d'oeuvres.
Stay Sail White
A blend of Vignoles and Vidal grapes

Both wines underwent malolactic fermentation - that is the natural conversion of malic acid to lactic acid softening the wine, leaving residual TA at 0.86. This is a full-bodied wine. Buttery taste with honeydew melon, grassy notes and a clean, lingering finish. Serve with ripe, pungent cheeses and peppery food.
